I’ve made lots of pickles over the years. My processed pickles are usually not super crunchy, but never have they turned out this terrible! This is the biggest pickle fail EVER!
These pickles were not just soft, they were mushy. Like mashed potato mushy…. Gross! I made them using a hot water bath, and I think my mistake was that when I put them in the water to process, the water was not boiling, and it took a really long time to boil, and then I left them in the boiling water bath for the recommended amount of time on top of the time they sat in there waiting for the water to boil. I think they just cooked down. This followed on the heels of my first time trying to make fermented pickles, which was also a major fail. Very frustrating. I have sworn off hot water bath canning for a little while. On to bigger and better things for now– refrigerator pickles (never get mushy) and fermented pickles with lid locks (they are supposed to keep all the air out so no mold or yuck can get in).
